Chocolate Top Cookies

Mmmm… cookies. The good news about this recipe is that it yields an extra cup of frosting, which makes a mighty fine snack once the cookies are gone.

Chocolate Top Cookies

Cookie Ingredients

  • 1 cup Earth Balance Buttery Sticks
  • 1/2 cup organic sugar
  • 2 tsp. vanilla extract
  • 2 cups flour
  • 4 tbsp. corn starch

Heat oven to 300 degrees. Beat first three ingredients until well blended. Gradually add flour and corn starch. Roll dough into balls and press into cookie shape on an ungreased cookie sheet. Bake for 25 minutes. Allow to cool, and top with frosting. Makes 24-28 cookies.

Chocolate Frosting

Frosting Ingredients

  • 6 tablespoons Earth Balance Buttery Sticks, softened
  • 1/3 – 3/4 cups cocoa powder, to taste
  • 2 2/3 cups powdered organic sugar
  • 1/3 cup soy, rice, or dairy milk
  • 1 teaspoon vanilla extract
  • Using a whisk attachment on a mixer, cream the Buttery Sticks. Add the cocoa and powdered sugar alternately with milk. Beat to spreading consistency, adding more milk if needed. Blend in vanilla. Makes 3 to 3 1/2 cups.
