Friday Night Bites: Beerownies II, Irish Boogaloo

I decided that the impending apocalypse was the perfect excuse to try the double chocolate stout beerownies again. I was not able to get to a store that carries a double chocolate stout before the roads started to get snowy, so I decided to experiment with Guinness instead. I have had this idea in my head about making Guinness brownies for years, but never quite got around to it.

I am delighted by how these came out. In fact, these may be my very favorite brownies ever, vegan or otherwise – decadent, dark, and sophisticated, much like yours truly.

Thing is, though, Guinness is not vegan. If that is of issue, an option is to stick with the double chocolate stout, or go with any really dark, bitter beer for similar results (like Yuengling Porter). I may give this a try with the porter at some point – my hunch is that I might need to increase the amount of instant coffee in the recipe by just a tad to bring that lovely bitterness back in.
