Mmmm… Pancakes

Major breakfast win this morning: whole wheat oatmeal pancakes. It is always exciting when I find a recipe online, do my own thing with it, and it comes out great the first time. The extra bonus win is that there is absolutely nothing fancy (or shmancy) in this recipe. It is great if you’re vegan, and an easy alternative if you’re not, and just happen to be out of eggs (which was always my issue – I would get into a baking frenzy and buy a dozen eggs, use half, and they would be bad by the time I was ready for the next frenzy. On that note, it has been so long since I bought eggs that I can’t remember where they are in the grocery store. Weird. I am picturing a store and… hmmm.)

Oatmeal Pancakes

1 cup flour (I use whole wheat)
1/2 cup quick oats (not instant)
1 tbsp sugar or agave
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp canola oil
1 – 1 1/4 cups sour soy (or whatever) milk (milk + 1-2 tsp. vinegar)
1/2 – 1 tsp vanilla extract

Combine dry ingredients in a bowl. Combine wet ingredients separately and add to dry ingredients. Stir until just mixed. Cook over medium heat, makes about six pancakes. Batter will thicken on standing.
