I absolutely love these cookies. They are halfway between a cookie and a mini scone – earthy, nutty, and just sweet enough, much like yours truly. Because they are sweetened with maple syrup they are a little bit easier on the old blood sugar that regular cookies, too. And, like so many of my favorite recipes, there is nothing fancy in the ingredient list so they can very easily be made using vegan or conventional ingredients.
